The diagram illustrates two methods of producing black tea: a traditional method, which produces loose tea, and a modern method, which produces tea bags.
Overall, the two methods share several stages, both beginning with fresh tea leaves being picked by hand and ending with the leaves being fired or dried. The only difference lies in the middle stage, where the leaves are either rolled or cut.
At the initial stage, only the bud and the top two leaves of the tea plant are manually picked to ensure high quality, after which they are withered by passing air through them on racks, which removes 60% of their moisture. At this point, the process divides into two methods. In the traditional method, the leaves are rolled flat and broken, which releases enzymes from them. In the modern method, by contrast, the leaves are cut, torn and curled, a quicker process that creates smaller granular pieces.
The process continues with both sets of leaves being spread on tiles or cement for oxidation, or fermentation, during which enzymes react with air and the leaves change to a copper colour. At the final stage, the leaves are fired or dried in ovens or hot air dryers, which removes 97% of their moisture in total and simultaneously releases the tea's flavour and aroma.
